Celebrate winter at Bundanon with an immersive evening of fire and flavour set against the misty backdrop of the Shoalhaven landscape.

Created by Executive Chef Douglas Innes-Will and Old Salt Distillery’s Terry and Michelle Robinson, this multi-course shared feast will feature fire-inspired dishes that showcase seasonal South Coast ingredients. Enjoy expertly paired cocktails and wines, live music, and the warm glow of the fire pits in an unforgettable sensory celebration that invites you to slow down, savour the season, and connect with community, land, and the elements.

  • Charcuterie by Old Salt with chicken liver parfait, duck rillette and freshly made dips, plus a selection of canapés by Bundanon
  • Woodfired braised lamb with red wine jus and pumpkin puree

Old Salt Distillery

Both chefs by trade, Terry and Michelle Robinson have dedicated over two decades in their craft working at some of the best Sydney institutions (Tetsuya, Quay, Sepia, Victor Churchill, Bourke Street Bakery). These establishments have cemented fundamental approaches towards food, from following the seasons and sourcing quality produce to curating simple approachable menus that highlight culinary techniques.
